ENCHILADAS DE POLLO ASADO TRAEGER

Asa y desmenuza el jugoso pollo antes de enrollarlo con chiles, frijoles negros y queso, luego cuece estas enchiladas a la perfección en la Traeger.rce.

1 1/2 (4 libras) de pollo entero
4 1/2 Cucharada de Aceite de Oliva
Sal necesaria
Pimienta negra recién molida según sea necesario
1 1/2 cebolla blanca pequeña, cortada en cubitos
1 1/2 (4 oz) lata de chiles verdes cortados en cubitos
12 tortillas de harina grandes
3 latas (10 oz) de salsa para enchiladas
1 1/2 lata (15.5 onzas) de frijoles negros o lentejas, enjuagados y escurridos
4 1/2 taza de queso rallado mezcla mexicana
Cilantro fresco, para servir
Crema agria, para servir

Cuando esté listo para cocinar, ajuste la temperatura Traeger a 350 °F y precaliente con la tapa cerrada durante 15 minutos.

Frote aceite de oliva sobre el pollo y sazone con sal y pimienta.

Inserte la sonda en la parte más gruesa del seno, evitando tocar los huesos. Coloque el pollo directamente sobre las rejillas de la parrilla, cierre la tapa y cocine hasta que la temperatura interna alcance los 165 °F, 1 hora.

Retire el pollo de la parrilla y deje reposar durante 10 minutos. Con un tenedor, desmenuce el pollo del hueso y déjelo a un lado.

En una sartén grande a fuego medio-alto, caliente el aceite. Agregue la cebolla y saltee durante 3 minutos, revolviendo ocasionalmente. Agregue los chiles verdes, sazone con sal y pimienta y saltee durante 6-8 minutos, revolviendo ocasionalmente. Retire del fuego y combine el pollo desmenuzado con la mezcla.

Engrase una fuente para hornear de 9 x 13 pulgadas. Para armar las enchiladas, configure una línea de ensamblaje que incluya: tortillas, salsa para enchiladas, frijoles, mezcla de pollo y queso.

Coloque una tortilla y extienda dos cucharadas de salsa sobre la superficie de la tortilla. Agregue los frijoles en línea por el centro de la tortilla, luego agregue una cucharada de la mezcla de pollo y espolvoree con 1/3 taza de queso. Enrolle la tortilla y colóquela con la costura hacia abajo en la fuente para hornear. Repita con los ingredientes restantes.

Extienda la salsa de enchilada restante sobre las tortillas, luego espolvoree el queso rallado restante.

Coloque la fuente para hornear directamente sobre las rejillas de la parrilla, cierre la tapa y cocine sin tapar, hasta que el queso y la salsa burbujeen y las enchiladas estén bien calientes, 20 minutos.
