TRAEGER LOADED TOTCHOS

Consider this more of a recipe suggestion than a hard and fast recipe, as these loaded tater tot nachos are fun to play around with, and you’ll need to eyeball the amounts depending on the size of your baking dish, your crowd, and your appetite. Replace the pulled pork with chicken or brisket and the refried beans with black beans if you like. Skip the olives if not your thing and add bacon if you want—it’s never not welcome.

INGREDIENTS 

Totchos
Enough frozen tots to make at least 2 to 3 layers in your baking dish; 4 if very deep
Leftover pulled pork
Canned diced jalapeños
Sliced black olives
Refried beans
Nacho cheese sauce, warmed

Suggested Toppings
Salsa
Sour cream
Fresh jalapeños, thinly sliced
Shredded iceberg lettuce
Fresh cilantro, whole leaves or chopped

Cook the tots according to package directions. Set aside.

Preheat the Traeger with the lid closed to 400°F; this will take about 15 minutes.

In a deep baking dish, add enough of the tots in a single layer to cover the bottom of the pan. Top with some of the pulled pork, jalapeños, and olives. Dollop some of the beans and then drizzle a decent (or decadent) amount of the cheese sauce over the nuggets.

Repeat these layers until you run out of room or ingredients, whichever comes first.

Transfer the pan to the grill grate and cook until heated through and crisp on the edges. The time this takes will vary depending on the number of layers involved but plan on about 30 minutes and begin checking earlier. To test if hot throughout, poke a skewer into the pan then place the tip of it on your wrist. It it’s hot you’re good to go.

Transfer the baking dish to a heatproof surface. Use a knife to cut around the edges of the pan to loosen the totchos from it. Place a rimmed baking sheet or other large flat serving platter over the pan. Carefully, and using pot holders, flip the baking sheet and dish over. Remove the baking dish to reveal the tower of tots.

Serve the totchos with your favorite toppings and dig in. Enjoy!

Crispy Fish Street Tacos cooked on the Blackstone griddle are the perfect way to spice up taco night! With golden, crunchy fish, fresh toppings, and zesty sauce in a warm tortilla, they’re bursting with bold flavor in every bite. Servings 4 Prep Time 10 minutes Cook Time 10 minutes Ingredients 1 pound fresh fish (cut into bite-sized pieces) 2 cups Panko bread crumbs 4 eggs (whisked) Blackstone Tequila Lime seasoning (to taste) Add To Cart Cooking oil (for the griddle) 8 street taco-size flour tortillas Queso fresco or cotija cheese (crumbled) 1 lime (juiced) Mexican crema (for drizzling) Hot sauce (optional) Fresh cilantro (chopped) Directions 1. Preheat your Blackstone griddle to low heat. 2. In a bowl, combine the Panko bread crumbs with a generous amount of Tequila Lime seasoning. 3. In a separate bowl, whisk the eggs. Dip each piece of fish into the whisked eggs, ensuring they are fully coated, then roll them in the seasoned Panko mixture until covered. 4. Drizzle cooking oil onto the griddle. Place the breaded fish on the griddle and cook for about 5–6 minutes, flipping frequently until all sides are golden brown and the fish is cooked through. Remove from heat and set aside. 5. Warm the tortillas by placing them on the griddle for about 30 seconds on each side until soft and pliable. Be careful not to let them crisp up unless you prefer a crunchier texture. 6. Assemble the tacos by placing some crispy fish pieces in each tortilla. Sprinkle with crumbled queso fresco, squeeze fresh lime juice on top, and drizzle with Mexican crema.
