TRAEGER CHEESY SKILLET CORNBREAD WITH PEPPRONCINI

This old fashioned cornbread recipe comes courtesy of Momma Rodgers, the mother of Traeger's own senior creative director. Its super moist texture is reminiscent of spoonbread, but it’ll hold together when sliced. A little cheesy and a little spicy, it not only pairs well with turkey and all the fixings, but it also tastes great with chili.

INGREDIENTS
Cooking spray
1 Cup stone ground yellow cornmeal
2 Teaspoon baking powder
1/2 Teaspoon salt
2 large eggs
1 8.5-oz can cream style corn
4 Ounce salted butter melted and slightly cooled
1 Cup sour cream
1 Cup grated cheddar cheese
3 jarred pepperoncini, seeded and finely chopped

Very lightly spray an 8-inch square baking dish or 9-inch cast-iron skillet with cooking spray. Preheat the Traeger with the lid closed to 350°F; this will take about 15 minutes.

In a medium bowl, whisk the cornmeal, baking powder, and salt. Add the eggs, corn, butter, and sour cream and beat with a spoon until just combined. Stir in the cheese and the pepperoncini. Scrape into the prepared baking dish.

Transfer to the grill grates and bake until the bread is set and browning on the edges, about 45 minutes.

Let cool briefly before slicing and serving. Enjoy!

Servings 4 Prep Time 10 minutes Cook Time 10 minutes Ingredients 1 pound fresh fish (cut into bite-sized pieces) 2 cups Panko bread crumbs 4 eggs (whisked) Blackstone Tequila Lime seasoning (to taste) Add To Cart Cooking oil (for the griddle) 8 street taco-size flour tortillas Queso fresco or cotija cheese (crumbled) 1 lime (juiced) Mexican crema (for drizzling) Hot sauce (optional) Fresh cilantro (chopped) Directions 1. Preheat your Blackstone griddle to low heat. 2. In a bowl, combine the Panko bread crumbs with a generous amount of Tequila Lime seasoning. 3. In a separate bowl, whisk the eggs. Dip each piece of fish into the whisked eggs, ensuring they are fully coated, then roll them in the seasoned Panko mixture until covered. 4. Drizzle cooking oil onto the griddle. Place the breaded fish on the griddle and cook for about 5–6 minutes, flipping frequently until all sides are golden brown and the fish is cooked through. Remove from heat and set aside. 5. Warm the tortillas by placing them on the griddle for about 30 seconds on each side until soft and pliable. Be careful not to let them crisp up unless you prefer a crunchier texture. 6. Assemble the tacos by placing some crispy fish pieces in each tortilla. Sprinkle with crumbled queso fresco, squeeze fresh lime juice on top, and drizzle with Mexican crema.
